Lemon Poppy Seed Kefir Overnight Oats
This refreshing kefir-based breakfast is rich in protein, fibre, and flavour. Perfect for busy mornings or meal prep!

Ingredients

1/3 cup rolled oats
-
1/2 cup Greek yoghurt
-
1/2 cup Kerry Kefir
-
1/4 cup water
-
1 tsp psyllium husk
-
2 tbsp vanilla protein powder
-
Juice of 1/2 lemon
-
1 tsp poppy seeds
Toppings:
-
1 tbsp Greek yoghurt
-
Fresh blueberries
-
Sprinkle of lemon zest
Method
- In a bowl or jar, mix the oats, yoghurt, kefir, water, psyllium husk, protein powder, lemon juice, and poppy seeds until well combined.
- Cover and chill overnight in the fridge to allow the oats to soak and thicken.
- In the morning, top with a spoon of yoghurt, fresh blueberries, and a sprinkle of lemon zest.
- Serve cold and enjoy!
