Lemon Poppy Seed Kefir Overnight Oats

This refreshing kefir-based breakfast is rich in protein, fibre, and flavour. Perfect for busy mornings or meal prep!

Chill time: Overnight

Ingredients

  • 1/3 cup rolled oats

  • 1/2 cup Greek yoghurt

  • 1/2 cup Kerry Kefir

  • 1/4 cup water

  • 1 tsp psyllium husk

  • 2 tbsp vanilla protein powder

  • Juice of 1/2 lemon

  • 1 tsp poppy seeds

    Toppings:

  • 1 tbsp Greek yoghurt

  • Fresh blueberries

  • Sprinkle of lemon zest

Method

  1. In a bowl or jar, mix the oats, yoghurt, kefir, water, psyllium husk, protein powder, lemon juice, and poppy seeds until well combined.
  2. Cover and chill overnight in the fridge to allow the oats to soak and thicken.
  3. In the morning, top with a spoon of yoghurt, fresh blueberries, and a sprinkle of lemon zest.
  4. Serve cold and enjoy!
