Crispy Kefir Chicken

This Crispy Kefir Chicken recipe is perfect for a flavourful and satisfying meal, offering a delicious blend of tangy kefir-marinated chicken with a crispy, spiced coating.

Prep time: 20 minutes (plus 6 hours for marinating)

Cooking time: 10 minutes

Ingredients

  • 4 boneless, skinless chicken breasts
  • 240 ml (1 cup) Kerry Kefir
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika, plus extra for coating
  • 2 tablespoons maple syrup
  • Juice of half a lemon
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 120 grams (1 cup) all-purpose flour
  • 120 grams (1 cup) breadcrumbs
  • Optional: 1/2 teaspoon cayenne pepper
  • Vegetable oil for frying

For Serving:

  • Burger buns or baps
  • Lettuce, tomato, and pickles
  • Your choice of sauce (e.g., mayonnaise, mustard, or a special burger sauce)

Method

  1. Marinate the Chicken: In a large bowl, mix the kefir, salt, smoked paprika, maple syrup, lemon juice, Dijon mustard, and minced garlic. Place the chicken breasts in the marinade, ensuring they are well coated. Cover and refrigerate for at least 6 hours, or overnight for best results.
  2. Prepare the Coating: In a shallow dish, combine the flour, breadcrumbs, additional smoked paprika, and cayenne pepper (if using). Mix well.
  3. Coat the Chicken: Remove the chicken from the marinade, letting the excess drip off. Dredge each piece first in the flour mixture, then back into the marinade briefly, and again in the flour mixture to ensure a thorough coating.
  4. Fry the Chicken: In a large skillet, heat the oil over medium-high heat. Once hot, fry the chicken pieces until golden brown and cooked through, about 4-5 minutes per side. Ensure the internal temperature reaches 75°C.
  5. Assemble the Burger: Toast the buns if desired. Place a fried chicken piece on each bun, then top with lettuce, tomato, pickles, and your choice of sauce.
