A creamy kefir açaí bowl with frozen berries, crunchy granola, seeds, fresh fruit and local Irish honey – a colourful breakfast that’s ready in minutes.
Did you know?
Local honey and kefir make a lovely pairing beyond just taste. Kefir provides live cultures, while honey contains plant compounds and small amounts of oligosaccharides that may help support beneficial gut bacteria. Add fibre-rich berries, seeds and granola, and this açaí bowl brings together probiotics and prebiotic foods in one delicious breakfast.
Serves: 1 large bowl
Prep time: 10 minutes
Ingredients
For the crunchy base
- 30g granola
- 1 tbsp mixed seeds, such as pumpkin, sunflower, chia or flaxseed
For the kefir açaí
- 100ml Kerry Kefir
- 100g frozen mixed berries
- 100g frozen açaí purée
- 1 tsp local Irish honey, optional
To top
-
- Fresh strawberries, sliced
- Fresh blueberries
- ½ banana, sliced
- 1 tbsp desiccated coconut
- 1 tbsp nut butter
- A drizzle of local Irish honey
- Extra granola or mixed seeds for crunch
Top Tips
The toppings are completely flexible. Try whatever is in season or already in the cupboard, chopped nuts, raspberries, blackberries or a sprinkle of cacao nibs all work well. The key is combining the creamy frozen kefir and berry mixture with plenty of crunch.
Method
Make the base. Add the granola and mixed seeds to the bottom of your bowl, keeping a little aside to sprinkle over the top.
Blend the açaí. Add the frozen berries, açaí, frozen banana and Kerry Kefir to a blender or food processor. Blend until thick and creamy. Add a small extra splash of kefir if needed, but keep the mixture thick enough to eat with a spoon.
Assemble your bowl. Spoon the kefir açaí mixture over the granola and seed base.
Add the toppings. Arrange the strawberries, blueberries and banana on top. Finish with desiccated coconut, nut butter, the remaining granola and seeds, and a drizzle of local honey.
