Spiced Kefir & Cranberry Loaf

A gently spiced, gut-friendly. quick bread featuring kefir, warm cinnamon, and bursts of tart cranberry.

Perfect for gifting, toasting, or enjoying with a hot cuppa on a chilly morning.

Serves: 1 Loaf

Prep time: 5-10 minutes 

Baking time: 40-45 minutes 

Ingredients

  • 300g plain flour
  • 1 tsp baking powder
  • 1/2 tsp bread soda (bicarbonate of soda)
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • Pinch of salt
  • 100g light brown sugar
  • 250ml Kerry Kefir

  • 1 egg

  • 75ml melted butter or rapeseed oil

  • Zest of 1 orange

  • 100g fresh or dried cranberries

  • Optional: 50g chopped walnuts or pecans

Method

  1. Preheat oven to 180°C (fan) / 200°C / Gas Mark 6. Line a 2lb loaf tin with parchment paper.

  2. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, bread soda, spices, salt, and sugar.

  3. Combine wet ingredients: In a separate bowl, whisk kefir, egg, melted butter/oil, and orange zest until smooth.

  4. Bring it all together: Add wet ingredients to dry and fold until just combined. Gently stir in cranberries and nuts, if using.

  5. Bake: Pour into prepared tin and bake for 40–45 minutes, or until a skewer comes out clean. Cool in tin for 10 mins, then transfer to a wire rack.

Serving suggestion:

Serve warm with a smear of butter or orange zest cream cheese. Keeps for 3–4 days and freezes well.
