Serves: 4-6

Prep time: 20 minutes

Cooking time: 12 minutes + 4 hours marinating

Ingredients

  • 1 cup (240ml) Kerry Kefir
  • 3 garlic cloves, crushed
  • 1 lemon, zest and juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and freshly ground black pepper, to taste
  • 900g chicken breast, cut into 2.5 cm cubes
  • Fresh vegetables for skewering (bell peppers, onions, courgettes)
  • Fresh herbs (such as coriander or parsley) for garnish

    Method

    1. Prepare the Marinade: In a large bowl, whisk together the kefir, crushed garlic, lemon zest and juice, olive oil, honey, smoked paprika, cumin, salt, and pepper until well combined.
    2. Marinate the Chicken: Add the chicken cubes to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 4 hours, or overnight for the best flavour.
    3. Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated chicken and your choice of vegetables alternately onto the skewers.
    4. Cook the Skewers: Preheat your grill to a medium-high heat. Place the skewers on the grill, cooking for about 10-12 minutes, turning occasionally, until the chicken is thoroughly cooked and the vegetables are charred and tender.
    5. Serve: Garnish the skewers with fresh herbs before serving. Enjoy these flavourful skewers with a side of kefir-based tzatziki . They can be served over a bed of rice, alongside a fresh salad, or with flatbreads.
