Kefir Chia Seed Pudding

With just 4 ingredients, it transforms into a delicious meal that you’ll eagerly anticipate every morning. Packed with gut-friendly bacteria and customisable with your favourite toppings, this pudding is as delightful to eat as it is beneficial for your health.

Ingredients
- 1-2 tablespoons Chia Seeds (adjust based on your tolerance and desired thickness)
- 4 tablespoons Kerry Kefir
- 5 tablespoons Vanilla Coconut Yoghurt (or any thick yoghurt of your choice)
- 1 teaspoon Honey (maple syrup or chicory root syrup are great alternatives)
- Toppings of your choice (suggested: mango, pomegranate seeds, and a chopped granola bar)

Yoghurt Thickness: If you’re using a thinner yoghurt, you might need to adjust the amount of chia seeds to achieve the right consistency.

Digestive Considerations: For those with sensitive stomachs, such as IBS, start with 1 tablespoon of chia seeds and increase if you know you can tolerate more.
Method
Mix Ingredients: In a jar, combine the chia seeds, Kerry Kefir, yoghurt, and honey. Stir well until all components are thoroughly mixed.
Refrigerate: Seal the jar and place it in the refrigerator for at least 2 hours, or ideally overnight. This waiting period allows the chia seeds to expand, thickening the mixture to a pudding-like consistency.
Check Consistency: After the initial 2 hours, check the consistency of the pudding. If it’s too thin, add a bit more chia seeds, stir, and return it to the fridge.
Add Toppings and Serve: Once the pudding has reached your desired thickness, remove it from the fridge, give it a good stir, and top it with your chosen toppings like mango, pomegranate, and chopped granola bar for a delightful crunch and flavour.
