Original recipe by @boredoflunch, adapted with Kerry Kefir.

Serves: 4

Cooking time: 15 minutes

Ingredients

  • 200g oats
  • 2 bananas, mashed
  • 1 teaspoon baking powder
  • A pinch of salt
  • 50g ground almonds
  • 1 egg
  • 1 teaspoon almond or vanilla extract
  • 200ml milk and Kerry Kefir combined
  • 1 scoop vanilla protein powder, optional
  • Flaked almonds and icing sugar, to finish

    For the almond filling

    • 20g ground almonds
    • 3 tablespoons honey
    • 2 tablespoons almond butter
    • A dash of water or milk

      Method

      • Add all the baked-oat ingredients to a large bowl and mix well.
      • Mix the ground almonds, honey and almond butter in a separate bowl. Gradually add a splash of water or milk until it forms a thick paste.
      • Divide the oat mixture between four oven-safe dishes.
      • Add approximately one tablespoon of almond filling to each dish and gently swirl it through the oats.
      • Sprinkle with flaked almonds.
      • Air fry at 170°C for 13–15 minutes, depending on how gooey you like your baked oats.
      • Allow to cool slightly before finishing with a light dusting of icing sugar.
