Kefir Marinated Chicken Skewers

Ingredients
- 1 cup (240ml) Kerry Kefir
- 3 garlic cloves, crushed
- 1 lemon, zest and juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- Salt and freshly ground black pepper, to taste
- 900g chicken breast, cut into 2.5 cm cubes
- Fresh vegetables for skewering (bell peppers, onions, courgettes)
- Fresh herbs (such as coriander or parsley) for garnish
Method
- Prepare the Marinade: In a large bowl, whisk together the kefir, crushed garlic, lemon zest and juice, olive oil, honey, smoked paprika, cumin, salt, and pepper until well combined.
- Marinate the Chicken: Add the chicken cubes to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 4 hours, or overnight for the best flavour.
- Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated chicken and your choice of vegetables alternately onto the skewers.
- Cook the Skewers: Preheat your grill to a medium-high heat. Place the skewers on the grill, cooking for about 10-12 minutes, turning occasionally, until the chicken is thoroughly cooked and the vegetables are charred and tender.
- Serve: Garnish the skewers with fresh herbs before serving. Enjoy these flavourful skewers with a side of kefir-based tzatziki . They can be served over a bed of rice, alongside a fresh salad, or with flatbreads.
