Fakeaway Taco Fries with Kefir Sauce

Crispy oven-baked fries are loaded with taco-spiced minced beef and drizzled with a zesty, spicy kefir sauce. Garnish with your favourite toppings like cheese, jalapeños, and fresh cilantro for a delightful explosion of flavour.

Ingredients
Fries:
- 4 large russet potatoes, cut into fries (or use frozen fries for convenience)
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon chilli powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Taco Meat Topping:
- 450g minced beef (or minced turkey for a leaner option)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chilli powder
- 1/2 teaspoon paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 cup tomato sauce or salsa
Kefir Sauce:
- 240g Kerry Kefir
- 120g Greek yoghurt
- 1 clove garlic, minced
- Juice of 1/2 lime
- 2 tablespoons fresh coriander, chopped
- 1 tablespoon fresh chives, chopped
- 1 teaspoon chilli powder (adjust to taste)
- 1/2 teaspoon ground cumin
- Salt and black pepper to taste
Optional Toppings:
- Shredded cheese
- Chopped fresh tomatoes
- Jalapeño slices
- Chopped lettuce
- Fresh coriander
Method
Prepare Fries:
1. Preheat oven to 220°C/ 200°C fan assisted/ Gas Mark 7. Line a baking sheet with parchment paper.
2. Toss the potato fries with olive oil, paprika, chilli powder, cumin, garlic powder, salt, and pepper.
3. Spread them evenly on the baking sheet and bake for 25-30 minutes, turning halfway through, until crispy and golden.
Cook Taco Meat:
1. In a skillet over medium-high heat, sauté the onion and garlic until softened.
2. Add minced beef, breaking it up with a spatula. Cook until browned.
3. Stir in cumin, chilli powder, paprika, oregano, salt, and tomato sauce. Simmer for 5-7 minutes until the flavours blend.
Make Kefir Sauce:
1. In a bowl, whisk together kefir, Greek yoghurt, garlic, lime juice, coriander, chives, chilli powder, cumin, salt, and pepper.
2. Taste and adjust seasoning, adding more chilli powder if desired.
Assemble:
1. Arrange baked fries on a serving plate.
2. Spoon the taco meat over the fries, followed by any desired toppings (cheese, tomatoes, jalapeños, lettuce).
3. Drizzle generously with the kefir sauce.
4. Garnish with extra coriander or chives.
