Simple Kefir Bread

This innovative recipe was submitted by Edel at Lamh Sioda, using kefir instead of traditional yeast in bread making.
Unlike yeast, kefir’s natural fermentation process doesn’t just help the dough rise; it also breaks down gluten, making the bread easier to digest and adding a subtle tang and a tender crumb to your bread loaf.
Serves: 1 loaf
Prep time: 5 mins (+ 30 mins proving)
Cook time: 55 minutes
Ingredients
- 1 cup/ 240 mls Kerry Kefir
- 2 cups/ 240 grams Self-Raising Flour
- 1/4 teaspoon salt
Method
STEP 1
In a bowl, mix the 3 ingredients together
STEP 2
Prove for 30 minutes
To prove, if it’s a warm day, leave in front of a window. Alternatively, heat your oven for 5-10 minutes and then turn it off. It should be slightly warmer than room temperature, but not too hot.
STEP 2
Bake for 55 minutes in your oven at 180°C
